Recipe: Meatloaf
A delicious, and deliciously easy meatloaf.
Sometimes, I just want good, old-fashioned, home cooking, comfort foods. And what's more of a old-fashioned comfort food than meatloaf? But a good meatloaf recipe is sometimes hard to find (unless your grandmother will share hers).
This one was delicious, and will be one that you will be passing down to your children (and you're friends and family will be asking for).
Ingredients
- 1 lb. ground beef
- 1 small sweet onion, diced
- 1 medium green bell pepper, diced
- 1 egg
- 8 oz. can of diced tomatoes in juice
- 1/2 cup quick-cooking oats
- salt and pepper to taste
Topping
- 1/3 cup ketchup
- 2 Tbs. brown sugar
- 1 Tbs. yellow mustard
Directions
- Preheat oven to 375
- Mix all meat loaf ingredients together.
- On a greased baking sheet, shape mixture into a loaf.
- For topping, mix all ingredients together and spread on top of loaf
- Bake for 1 hour.

Very similar to my recipe, except 1lb would not do for us.
2.5 lbs Ground Beef
1 medium Onion - dice
1 Large Bell Pepper - dice
1/2 cup(one hand full) Oat Meal (everyone thinks this is odd until they try it)
2 Eggs
Salt & Pepper, sometimes Garlic Power
For the side:
Peel and chop up Potatos & Carrots, then put them in the pant with the meatloaf.
Cooktime about 1.5 hours @ 350

You'll also be fine with just one egg, 2 makes it kind of sloppy.

I made this and it was fabulous. Only thing I did different was add salsa instead of chopping peppers, onions and can of tomatoes. Very good. Will make again.
